Mandarin Crunch Salad

Ingredients:

3-4c Romaine Lettuce (or any blend you prefer)

1c Mandarin Oranges, drained

2 Green Onions, whites included, thinly sliced

1/4c Raw Cashews

1/4c Sliced almonds

1/2c Dry Ramen Noodles, broken into pieces

1/2 Bag MorningStar Farms Chick'n Strips, cooked

Dressing, to taste (directions to follow)


Sesame Vinaigrette

1/4c Rice Wine Vinegar

1T Soy Sauce

1T Water

1T Sesame Oil

2t Sesame Seeds

1t Agave Nectar

1/2t Cornstarch

1/3c Vegetable Oil


Directions:

1. Cook chick'n strips according to package directions

2. Mix dressing ingredients and blend well with a fork or whisk, making sure all ingredients are incorporated

3. Mix salad ingredients and top with desired amount of dressing

4. Garnish with extra sesame seeds


Notes:

Feel free to add any protein you like, approximately 1/2-3/4c grilled shrimp or shredded chicken would be my recommendations!
