Ingredients:
1 Large Head of Cauliflower, florets cut off stem
2T Extra Virgin Olive Oil
1/4c Grated Parmesan Cheese
2t Red Pepper Flakes
1T Lemon Zest
Salt and Pepper
Fresh / dried parsley, for garnish
Directions:
1. Preheat oven to 425F
2. Line baking sheet with parchment paper
3. Mix cauliflower florets with olive oil in large bowl, season with salt and pepper
4. Place cauliflower on prepared baking sheet and roast for 10 minutes
5. Remove from oven and stir cauliflower on baking sheet
6. Sprinkle parmesan cheese over cauliflower, making sure to keep the parmesan on the florets (easier said than done, I understand!)
7. Roast another 5-10 minutes - depending on how firm / soft you prefer your cauliflower
8. Remove from oven, sprinkle with red pepper flakes and lemon zest
9. Garnish with fresh / dried parsley
Makes approximately 2-4 servings
