Spinach, Mushroom, and Feta Frittata

Ingredients:

5oz Raw Spinach

8oz Sliced Mushrooms

3 Cloves Garlic, minced

6 Eggs

1/4c Whole Milk

2T Butter

1/3c Feta Cheese, crumbled

Salt and Pepper


Directions:

1. Whisk eggs together with milk, adding a pinch of salt and pepper

2. In a large, oven safe skillet, heat butter over medium high heat

3. Add garlic and mushrooms, cook 3-5 minutes

4. Add spinach, cook 2-3 minutes until it's mostly wilted

5. Reduce heat to medium, pour egg mixture over top, cook 3 minutes

6. Remove skillet from heat and top with crumbled feta -- it is OKAY if the egg isn't set on top

7. Place skillet in oven and broil 3-5 minutes until egg is set and starts to brown

8. Serve warm with a sprinkle of parsley and crushed red pepper (optional) or your choice of hot sauce


Makes approximately 5-6 servings
