Just as good as its trended.
Ingredients:
8oz Dried Cavatappi Pasta
6oz Crumbled Feta Cheese
1/2 Sweet Onion, thinly sliced - I used a mandolin
1/3c Chopped Basil
14oz Cherry Tomatoes, any variety
1/2-2/3c Extra Virgin Olive Oil
1/2t Salt
1/2t Italian Seasoning
1/4t Ground Black Pepper
2t Minced Garlic
Extra chopped basil and (optional) grated parmesan for serving
Directions:
1. Preheat oven to 400F
2. Meanwhile, slice the onions and chop the basil
3. In baking / au gratin dish, mix together tomatoes, onion, olive oil, salt, Italian seasoning, and black pepper
4. Cook tomatoes at 400F for 30 minutes. Mix about halfway through cooking time
5. While tomatoes blister, cook pasta according to package directions. Return to pan and toss with a few splashes of olive oil, to keep pasta from sticking
6. When tomatoes have cooked for 30 minutes, keep oven shut and turn on broiler (and vent! sometimes things can get smoky with the olive oil). Broil for 3-5 minutes, until tomatoes have a light char on them
8. Toss in pasta, mix until well coated
9. Garnish with extra chopped basil and (optional) grated parmesan cheese
10. Enjoy!
