aka Chocolate On Chocolate
Ingredients:
3/4c AP Flour
1/2c Cocoa Powder
3/4t Baking Powder
1/2t Baking Soda
1/4t Salt
1/2c Granulated Sugar
1/2c Brown Sugar, packed
1/3c Vegetable Oil
2 Eggs
2t Vanilla
1/2c Sour Cream
Directions:
1. Preheat oven to 350
2.In large bowl, mix together flour, cocoa powder, baking powder, baking soda, and salt
3. In stand mixer, combine sugars and vegetable oil
4. Mix on low until just combined
5. Add in eggs, vanilla, and sour cream
6. Slowly add in dry ingredients until just blended (mixture will be very loose)
7. Line mini muffin tin with paper cups (recipe will make approximately 48 cupcakes). Remember to only fill halfway
8. Bake at 350F for 15 minutes
9. Remove from tin immediately and cool on wire rack
Frosting Ingredients:
1c Butter, softened
3c Powdered Sugar
1/3c Cocoa Powder
2t Vanilla
2T Heavy Cream
10. While cupcakes are cooking / cooling, beat softened butter until smooth in stand mixer (using paddle attachment)
11. Add in powdered sugar and cocoa powder until well mixed, approximately 2 minutes
12. Add in vanilla
13. Slowly add in heavy cream, blend 1-2 minutes
14. Add frosting to piping bag with tip of your choice
15. Place cooled cupcakes on cookie sheet, frost to your liking, and add sprinkles!
